National Gingerbread Day

Gingerbread? In Summer?! YES!! It’s National Gingerbread Day and we are in HEAVEN! The warm, spicy aroma wafting from these tasty Keto treats is everything your late afternoon needs. Pair these cookies with a cold glass of your favorite milk and enjoy!

Gingerbread Cookies

Ingredients

  • 1 cup Almond Flour
  • 1/4 cup Coconut Flour
  • 1/2 tbsp Cinnamon
  • 1 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/8 tsp Nutmeg
  • 1/4 tsp Baking powder
  • 1/2 cup Erythritol
  • 1/2 cup butter, softened
  • 1 Egg
  • 1/2 tsp Vanilla extract

Instructions

  1. Combine almond flour, coconut flour, cinnamon, ground ginger, ground cloves, nutmeg, and baking powder. Set aside.
  2. In a large mixing bowl, beat the butter and erythritol for 1-2 minutes, until fluffy.
  3. Add egg and vanilla extract.
  4. Slowly add in the flour mixture until a dough forms.
  5. Chill dough in the refrigerator for an hour.
  6. Roll dough out to 1/4″ thickness.
  7. Use a cookie cutter to cut out cookie shapes and transfer them to a parchment-lined baking sheet.
  8. Bake at 350 for 10-15 minutes, until golden brown.
